Makes 20 delicious cookies 🙂
Preparation time: 15 mins
Baking time: 18 mins
  • 125g dark chocolate for melting (bar or chips)
  • 125g unsalted butter, softened
  • 75g brown sugar
  • 25g caster sugar
  • 150g plain flour
  • 30g cocoa powder, sifted
  • 1 tsp bicarbonate of soda
  • ½ tsps salt
  • 1 tsp vanilla extract
  • 1 egg
  • 350g dark chocolate chips for mixing
  1. Preheat the oven to 200°C.
  2. Place the 125g dark chocolate bar/chips in a heat-proof bowl set over a saucepan of simmering water. (If you are using a chocolate bar, break the bar into smaller pieces first). Ensure the water does not touch the bottom of the bowl. Stir the chocolate occasionally as it melts. Once the chocolate has melted, set it aside to cool.
  3. Cream the butter and two sugars in a mixer until light and fluffy. Add in the melted chocolate and stir well. Next, mix in the vanilla extract and egg.
  4. Combine all the dry ingredients (flour, cocoa powder, salt and bicarbonate of soda) in a separate bowl, then gently pour it into the mixture in the mixer and mix well.
  5. Once all ingredients are mixed evenly, gently fold in the 350g dark chocolate chips.
  6. Line the baking tray with grease-proof paper. Use a tablespoon or ice cream scoop to scoop out 20 equal-sized portions of the mixture onto the tray (do not flatten the scoop), and bake for 18 minutes.
  7. Once baked, transfer the cookies onto a cooling rack. The cookies will harden as they cool.
