Crumbles are such wonderful desserts. They are easy to make and are loved by everyone. Most of all, their warm buttery goodness combined with the sweet tanginess of their fillings are a great source of comfort.

We were experimenting around and came up with this yummy recipe that will make you very happy when it hits your belly.

Serves 2 to 4
Preparation time: 15 mins
Baking time: 30 mins

For the filling:

  • 200g strawberries, hulled
  • 50g blueberries
  • 25g caster sugar
  • 10g ground almonds
  • 2 tsps vanilla extract

For the crumble:

  • 60g plain flour
  • 1 tsp baking powder
  • 40g cold butter, diced
  • 50g flaked almonds
  • 30g soft brown sugar
  1. Preheat the oven to 200°C.

For the filling:

  1. Hull the strawberries (cut them into half if they are huge like mine) and put them into a pie dish together with the blueberries. I divided mine into two portions, so I am using two dishes (17cm in length) instead.
  2. Sprinkle the berries with sugar, almonds and vanilla extract. Mix everything with a spoon.

For the crumble:

  1. Put the flour, baking powder and brown sugar in a mixing bowl.
  2. Using only your thumb and fingers, knead/rub in the cold diced butter. The mixture should resemble rough, pale oatmeal.
  3. Mix in the flaked almonds with a fork.
  4. Cover the berries evenly with the topping. Try to cover the edges of the dish as well.
  5. Bake for 30 minutes in the oven. When ready, the crumble topping will have turned golden brown and some of the berries’ juices will be seeping and bubbling out at the edges.
  6. Leave to stand for about 10 minutes to cool before serving (Optional: Add in some vanilla ice cream!)
